Foodie Friday: Christmas Monkey Bread


This is an all-time favorite of mine. I have made it year-after-year for Christmas and it never fails to be delicious. Such an ooey-gooey cinnamon treat!

Ingredients:

  • 2 cans of cinnamon rolls
  • 1 cup of butter– 3/4th melted, 1/4 cubed
  • 1/2 cup cinnamon sugar
  • 2 handfuls of pecans, chopped

Preheat oven to 350 degrees. Coat a bundt pan (or any sort of pan for that matter– see picture for NON-bundt pan version). Place 1/4 cup of cubed butter, pecans, and a good sprinkle of cinnamon sugar in the bottom of the pan. Separate cinnamon rolls, cut into  quarters, and roll into a ball. Coat in butter then drop in cinnamon sugar. Place coated ball into pan. Once you have done this with all the cinnamon roll balls, place pan in oven and cook for 30 to 35 minutes or until not gooey in the center. Best enjoyed warm but certainly delish anytime!

Tasty Tuesday: Watermelon Rice Crispies


This is a recipe my mother sent to me years ago while I was living in New York to take a to a picnic. These are always a major crowd pleaser!

Makes 8 “slices”

Ingredients:

  • These will be separated in half for the “rind” and the “meat” portions
    • 4 cups of crispy rice cereal (not going to lie to you, I used Kroger brand for this)
    • 1/4 cup of butter
    • 10 oz of marshmallows
    • 2 tsps of vanilla for taste
  • Green and Red food coloring
  • Chocolate chips
  • ROUND baking dish

Coat the baking dish in wax paper (or with butter)– you just want to make sure that nothing sticks.

First make the rind of the watermelon. Make the marshmallow mixture by heating the butter, marshmallows,  and vanilla (either on the stovetop or in the microwave– I did the latter). Once completely combined, add green food coloring to get the proper color (about three drops). Add this to the 2 cups of crispy rice cereal. Once combined, make a ring on the outer portion of the round baking dish. (This is a sticky process since you have to handle the mixture).

Next, make the inside portion. Do the same thing as before, except this time, use the red food coloring to make a redish-pink color. Pour this in the center of the ring.

Finally, add chocolate chips to simulate seeds.

Let cool for at least an hour before cutting into slices.

Enjoy them while they last! They’ll go quickly that’s for sure! (8 slices lasted 2 days in this house…and I barely got to eat one…)
